Fresh Fig & Gorgonzola Bites With Prosciutto Perfection
Elevate your appetiser game with these delicious fresh figs. The combination of tangy Gorgonzola, salty Prosciutto and sweet, juicy figs creates a flavour explosion in every bite. Baked in a creamy sauce and garnished with crispy sage leaves, this dish is as beautiful as it is delicious.
Pair with our Estate Pinot Noir
Ingredients:
- 3 x Fresh Figs
- 3 Tbsp of Gorgonzola
- 3 x Slices of Prosciutto
- 100ml Fresh Cream
- Black pepper
- 8 Sage leaves
- 8 slices of any bread of your choice
Method:
- Take your figs and cut the top off, then cut a cross horizontally and vertically. Gently pull the sides apart, allowing it to open.
- Take 1 tbsp of Gorgonzola and insert it into the centre of the fig, pressing it in between the slices. (NB: The Gorgonzola must be soft and not too pungent)
- Wrap a single layer of Prosciutto around each fig. (Note: Not bacon as it is too thick, and not Parma Ham as it is too dry)
- Place 3 figs in an oven-friendly bowl and pour your cream over the figs.
- Lightly grind the black pepper over the figs – NO salt.
- Bake in the oven at 180°C for 12-15min, depending on fig size.
- Take your sage and gently deep fry them until it is crispy. Add one leaf on each fig. (NB: Do not substitute with any other herb, instead leave it off)
- Lastly, serve this dish with your choice of bread while enjoying our Estate Pinot Noir.
