Seven Flags Pinot Noir and Chardonnay are the top offerings in the portfolio of Paul Clüver Family Wines and have achieved greatness on the local and international stage for their compelling expression of consistent excellence.
An exceptional vineyard planted on Paul Clüver Family Wines’ estate in 1987 provides the grapes for the flagship Seven Flags Chardonnay. Each bunch is selected by hand. After whole-bunch pressing for purity, the juice ferments with wild yeasts whereafter the wine is laid in a selection of barrels for nine months. Minimum intervention, allowing the magic of wine ageing to do the work, results in an exceptional wine of gravitas and optimal terroir expression underscoring the pursuit of excellence in Chardonnay.
The farm’s more mature Pinot Noir vineyards, aged between 13 and 19 years, are sought-out for making our icon Pinot Noir, the Seven Flags. At harvest each berry is selected by hand. Whole berries are fermented in open wooden vats, with intermittent punch-downs to extract velvety tannins from the skins as well as an alluring garnet colour. Aged in selected French oak barrels for 12 months, Seven Flags Pinot Noir succeeds in offering a Pinot Noir of striking individuality with layered complexity harnessed to showcase its distinctive sense of place.
