Summer Herb Sandwich with Pickled Apples paired with our Village Chardonnay

Fresh, light, and bursting with herbaceous flavours, this dish is the perfect match for our Paul Clüver Village Chardonnay. The crisp, citrusy notes of the Chardonnay enhance the vibrant mix of herbs and vegetables, while its subtle creaminess pairs beautifully with the soft chèvre and the sweet-salty balance of the peaches, pickled apples, and cured ham. Whether it is for a light lunch or a sophisticated snack, this pairing will leave you feeling refreshed and satisfied, with every bite and sip elevating the other.

Servings: 6 pax

Ingredients:

  • 1/2 sunny lettuce
  • Handful of mixed vegetables
  • A dash of mint
  • A few sprigs of pak choi
  • Rosemary, to taste
  • A dash of basil
  • A dash of oregano
  • Other herbs of your choice such as lemon balm and thyme
  • Mint is essential
  • A 2 slices of cured ham
  • A good knob of butter
  • 6 (about 5 mm) slices chèvre (enough to spread on bread)
  • 2 slices sandwich bread

Peaches

  • Pickled apples
  • A 1/2 apple (part of which is actually used)
  • A little more than 1 teaspoon of ginger
  • A 1 tbsp honey, depending on the sugar content of the apples
  • A 1 tbsp vinegar
  • A 2 pinches of salt

Method:

  1. First, make the apple pickles the day before.
  2. Slice the apples.
  3. Add ingredients to a bowl and grate the ginger. Mix with the apples and leave overnight.
  4. Bring butter to room temperature and leave to soften.
  5. Mix herbs with mixed vegetables.
  6. Slice the peaches.
  7. Lightly chop the rosemary.
  8. Place the peaches and rosemary in a bowl.
  9. Lightly season with salt and pepper (white paper) and a dash of olive oil.
  10. Bring the butter to room temperature.
  11. Spread on the bread.
  12. Spread with sunny lettuce.
  13. Top with the prosciutto.
  14. The top with peaches and apples.
  15. Finally, the cheese, in that order.
  16. Wrap it in a tightly wrung cloth (or plastic wrap) and weigh it down lightly.
  17. Leave to rest for a few minutes.
  18. Cut into bite-size pieces and serve.

Key Points:

The salty balusters of the ham and fruit cheese are good.

You can use any herbs you like.

Mint tastes better with a little more mint than other herbs.

The peach and apple should be enough to get half a peach and half an apple in your mouth wherever you eat them.
